Roasted Shrimp With Honey-pepper Vinaigrette Recipe

Ingredients
  • 12 unpeeled jumbo shrimp (about 3/4 lb)
  • 2 garlic cloves, minced
  • 3 tbsps sherry vinegar
  • 3 lbs rock salt
  • 1 tsp freshly ground black pepper
  • 1/2 tsp kosher salt
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp minced shallots
  • 2 tbsps honey

Directions
  • Step #1 Preheat oven to 400°.
  • Step #2 Combine the first 7 ingredients in a bowl; stir well with a whisk.
  • Step #3 Place a 1-inch-thick layer of rock salt (about 3 lbs) in the bottom of a Dutch oven.
  • Step #4 Place the pan in oven at 400° for 30 mins or until rock salt is very hot.
  • Step #5 Arrange shrimp in a single layer over rock salt.
  • Step #6 Cover up & bake this at 400° for 2 mins.
  • Step #7 Turn shrimp over, & bake for an extra 2 mins or until done.
  • Step #8 Serve the shrimp with vinaigrette.
