Seafood Salad Recipe

Ingredients
  • 1 tbsp minced seeded jalapeño pepper
  • 1 tsp salt
  • 3 tbsps minced shallots
  • 16 Bibb lettuce leaves
  • 2 tbsps fresh lime juice
  • 1 lb medium shrimp, peeled
  • 1/2 lb sea scallops
  • 3/4 c sliced seeded tomato
  • 1/4 c minced fresh cilantro
  • 1 (6-oz) mahimahi fillet or other firm white fish fillets (about 1/2 inch thick)

Directions
  • Step #1 Steam shrimp & scallops, covered, 6 mins or until done.
  • Step #2 Cool & cut shrimp & scallops into quarters.
  • Step #3 Steam mahimahi, covered, 8 mins or until fish flakes easily with a fork.
  • Step #4 Cool & cut fish into 1-inch pieces.
  • Step #5 Combine the shrimp, cilantro, shallots, lime juice, jalapeño pepper, scallops, tomato, fish, & salt in a bowl.
  • Step #6 Spoon 1/4 c seafood mixture into center of each lettuce leaf, & roll up.
