Ingredients
1 tbsp minced seeded jalapeño pepper
1 tsp salt
3 tbsps minced shallots
16 Bibb lettuce leaves
2 tbsps fresh lime juice
1 lb medium shrimp, peeled
1/2 lb sea scallops
3/4 c sliced seeded tomato
1/4 c minced fresh cilantro
1 (6-oz) mahimahi fillet or other firm white fish fillets (about 1/2 inch thick)
Directions
Step #1 Steam shrimp & scallops, covered, 6 mins or until done.
Step #2 Cool & cut shrimp & scallops into quarters.
Step #3 Steam mahimahi, covered, 8 mins or until fish flakes easily with a fork.
Step #4 Cool & cut fish into 1-inch pieces.
Step #5 Combine the shrimp, cilantro, shallots, lime juice, jalapeño pepper, scallops, tomato, fish, & salt in a bowl.
Step #6 Spoon 1/4 c seafood mixture into center of each lettuce leaf, & roll up.
