Fava Bean Bruschetta Recipe

Ingredients
  • 2 1/4 lbs unshelled fava beans
  • 1 tbsp fresh lime juice
  • 1 garlic clove, minced
  • 1/2 c (2 oz) shaved Manchego viejo cheese
  • 2 tbsps extravirgin olive oil
  • 1 tbsp sliced fresh tarragon
  • 1/4 tsp salt
  • 1 (1-lb) French bread baguette, cut into 32 slices

Directions
  • Step #1 Remove beans from pods; discard pods.
  • Step #2 Cook beans in boiling water 1 min; rinse with cold water.
  • Step #3 Drain; remove outer skins from beans.
  • Step #4 Discard skins.
  • Step #5 Place beans in a food processor/blender.
  • Step #6 Add tarragon & next 4 ingredients (through garlic); process until almost smooth.
  • Step #7 Spread about 1 1/2 tsps bean mixture over each bread slice.
  • Step #8 Arrange cheese evenly over bread slices.
