Vietnamese Rolls With Peanut Dipping Sauce Recipe

Ingredients
  • 1/4 tsp salt
  • 4 tsps minced peeled fresh ginger
  • 1 lb skinless, boneless chicken breast, cut into 1/4-inch-wide strips
  • 3 c thinly sliced romaine lettuce
  • 1/2 c seasoned rice vinegar
  •  Sauce:
  • 36 (2-inch) julienne-cut seeded peeled cucumber
  • 4 garlic cloves, minced
  • 1/3 c finely sliced roasted peanuts
  • 1 tbsp peanut oil
  • 1 tsp hot chile sauce (such as Sriracha)
  • 12 (8-inch) round sheets rice paper
  • 1/4 c honey
  • 36 mint leaves
  • 36 (2-inch) julienne-cut red bell pepper
  •  Rolls:
  • 1/3 c hoisin sauce

Directions
  • Step #1 To prepare sauce, mix first 3 ingredients in a small bowl, stirring until honey dissolves.
  • Step #2 Stir in peanuts.
  • Step #3 To prepare rolls, heat oil In a large-ish nonstick skillet over medium-high heat.
  • Step #4 Add ginger, garlic, & chicken; sauté 5 mins.
  • Step #5 Combine chicken mixture, hoisin sauce, & chile sauce; chill in the fridge.
  • Step #6 Add hot water to a large, shallow dish to a depth of 1 inch.
  • Step #7 Place 1 rice paper sheet in dish.
  • Step #8 Let stand 30 seconds or just until soft.
  • Step #9 Place sheet on a flat surface.
  • Step #10 Arrange 1/4 c lettuce over half of sheet, leaving a 1-inch border.
  • Step #11 Top lettuce with 1/4 c chicken mixture, 3 cucumber strips, 3 bell pepper strips, & 3 mint leaves.
  • Step #12 Folding sides of sheet over filling & starting with filled side, roll up jelly-roll fashion.
  • Step #13 Gently press seam to seal.
  • Step #14 Place roll, seam side down, on a serving platter (cover to keep from drying).
  • Step #15 Repeat procedure with remaining sheets, chicken mixture, lettuce, bell pepper strips, cucumber strips, & mint leaves.
  • Step #16 Slice each roll in half diagonally.
  • Step #17 Serve rolls with sauce.
