Ingredients
  • 1 garlic clove, minced
  • 1/4 c sliced green onions
  • 2 c (1/4-inch-thick) diagonally cut slices peeled cucumber
  • 1/2 tsp dark sesame oil
  • 1/2 lb sushi-grade tuna, cut into (1/2-inch) cubes
  • 1/2 tsp grated peeled fresh ginger
  • 1 tbsp low-sodium soy sauce
  • 1 1/2 tsps peanut oil

Directions
  • Step #1 Combine the first 7 ingredients in a medium glass bowl.
  • Step #2 Cover up & chill 2 hrs.
  • Step #3 Serve tuna mixture over cucumber.
