Goat Cheese Tarts With Lemon-fig Compote Recipe

Ingredients
  • 1/8 tsp salt
  • 2 c finely sliced dried black Mission figs
  • 1 tbsp 1% low-fat milk
  •  Compote:
  • 2 tbsps powdered sugar
  • 1 c water
  • 1 tbsp fresh lemon juice
  • 1 large egg white
  • 1 tbsp grated lemon rind
  • 1/2 c (4 oz) fat-free cream cheese, softened
  • 2 (2.1-oz) packages mini phyllo shells (such as Athens)
  • 1/2 c Marsala wine
  • 1 tbsp brown sugar
  • 1 tbsp all-purpose flour
  • 1/8 tsp salt
  • 1 (4-oz) package goat cheese

Directions
  • Step #1 To prepare compote, mix first 7 ingredients in a medium saucepan.
  • Step #2 Bring to a boil.
  • Step #3 Cover up, reduce heat, & let simmer 20 mins, stirring every once in awhile.
  • Step #4 Simmer, uncovered, until mixture reduces to about 1 c (about 30 mins).
  • Step #5 Remove from heat; cool.
  • Step #6 Place fig mixture in a food processor/blender; pulse 5 times or until finely sliced.
  • Step #7 Place in a small bowl; cover & chill in the fridge.
  • Step #8 To prepare tarts, preheat your trusty oven to 350°.
  • Step #9 Arrange phyllo shells in a single layer on a jelly-roll pan.
  • Step #10 Combine cheeses in a medium bowl; beat with a mixer at medium speed until smooth.
  • Step #11 Add egg white; beat well.
  • Step #12 Add milk; beat well.
  • Step #13 Combine sugar, flour, & salt; add to cheese mixture, beating well.
  • Step #14 Spoon about 1 1/2 tsps cheese mixture into each phyllo shell.
  • Step #15 Bake at 350° for 15 mins or until lightly browned.
  • Step #16 Cool on a wire rack.
  • Step #17 Top each tart with about 1 1/2 tsps compote.
