Orange-glazed Chicken Wings Recipe

Ingredients
  • 2 tbsps grated orange zest (from about 3 oranges)
  • 1/2 tsp fresh-ground black pepper
  • 6 cloves garlic, minced
  • 1 1/2 tsps salt
  • 4 lbs chicken wings
  • 1 c fresh orange juice (from about 2 oranges)
  • 1 tbsp brown sugar
  • 1/4 c soy sauce

Directions
  • Step #1 Heat the oven to 400°.
  • Step #2 In a large bowl, brown sugar, soy sauce, garlic, mix the orange juice with the orange zest, salt, & pepper.
  • Step #3 Add the chicken wings & toss to coat.
  • Step #4 On two large baking sheets, arrange the wings in a single layer.
  • Step #5 Reserve 1/4 c of the orange mixture & spoon the rest of the mixture over the wings.
  • Step #6 Bake for 20 mins.
  • Step #7 Turn the wings over & baste them with the reserved orange mixture.
  • Step #8 Cook until just done, about 10 mins longer.
  • Step #9 Menu Suggestions: Serve this finger food with a vegetable that you can also eat with your hands, such as strips of raw fennel or jicama.
  • Step #10 Test-Kitchen Tip: When you grate the orange zest, remove only the orange layer of the skin, leaving the bitter white pith behind.
  • Step #11 Wine Recommendation: Sweet, & hot, this dish really needs a wine with good acidity, moderate alcohol, salty, & just a touch of sweetness.
  • Step #12 Look for a low-alcohol German kabinett riesling or a semi-dry riesling from the Finger Lakes region of New York.
