Ingredients
1 small fennel bulb, cut into 1/4-inch-thick wedges
1 tsp sliced fresh rosemary
1 tbsp extravirgin olive oil
12 pimiento-stuffed olives
1 tbsp balsamic vinegar
1/2 tsp fennel seeds
1 1/2 tsps grated orange rind
12 kalamata olives, pitted
Directions
Step #1 Heat oil In a large-ish nonstick skillet over med-heat/flame.
Step #2 Add rind, fennel seeds, rosemary, & fennel wedges; cook 5 mins, stirring frequently.
Step #3 Add olives; cook 1 min.
Step #4 Remove from heat; stir in the vinegar.
Step #5 Place fennel mixture in an 8-inch square baking dish.
Step #6 Cover up & let this stand at least 2 hrs.
Step #7 Preheat oven to 250°.
Step #8 Uncover olive mixture.
Step #9 Bake at 250° for 10 mins or until heated, stirring once.
