Warm Olives With Fennel And Orange Recipe

Ingredients
  • 1 small fennel bulb, cut into 1/4-inch-thick wedges
  • 1 tsp sliced fresh rosemary
  • 1 tbsp extravirgin olive oil
  • 12 pimiento-stuffed olives
  • 1 tbsp balsamic vinegar
  • 1/2 tsp fennel seeds
  • 1 1/2 tsps grated orange rind
  • 12 kalamata olives, pitted

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #2 Add rind, fennel seeds, rosemary, & fennel wedges; cook 5 mins, stirring frequently.
  • Step #3 Add olives; cook 1 min.
  • Step #4 Remove from heat; stir in the vinegar.
  • Step #5 Place fennel mixture in an 8-inch square baking dish.
  • Step #6 Cover up & let this stand at least 2 hrs.
  • Step #7 Preheat oven to 250°.
  • Step #8 Uncover olive mixture.
  • Step #9 Bake at 250° for 10 mins or until heated, stirring once.
