Chicken Sate With Peanut Sauce Recipe

Ingredients
  • 2 tsps bottled ground fresh ginger (such as Spice World)
  •  Sauce:
  • 1 1/2 tbsps low-sodium soy sauce
  • 1 lb skinless, boneless chicken breasts, cut into 8 strips
  • 1 tbsp light brown sugar
  •  Saté:
  • 2 1/2 tbsps low-sodium soy sauce
  • 1/4 tsp crushed red pepper
  • 1 garlic clove, minced
  • 1 tbsp fresh lime juice
  •  Remaining ingredient:
  •  Cooking spray
  • 1 tsp grated lime rind
  • 2 garlic cloves, minced
  • 2 tbsps natural-style, reduced-fat creamy peanut butter (such as Smucker's)
  • 1 tbsp light brown sugar
  • 1/4 tsp crushed red pepper

Directions
  • Step #1 Prepare grill.
  • Step #2 To prepare saté, mix chicken & next 6 ingredients (through 2 garlic cloves) in a medium bowl.
  • Step #3 Let stand 10 mins.
  • Step #4 To prepare sauce, mix 1 tbsp brown sugar & the next 5 ingredients (through 1 garlic clove) in a medium bowl, stirring until sugar dissolves.
  • Step #5 Thread chicken strips onto each of 8 (8-inch) skewers.
  • Step #6 Place chicken on grill rack coated with cooking spray; grill 5 mins on each side or until chicken is done.
  • Step #7 Serve chicken with sauce.
