Shrimp Salad With Avocado And Curried Rice Recipe

Ingredients
  • 2/3 c mayonnaise
  • 1 tsp curry powder
  • 1 c uncooked rice
  • 3 bacon slices, cooked & crumbled
  • 1/2 green bell pepper, sliced
  • 1/4 tsp freshly ground black pepper
  • 3/4 tsp salt
  • 1 lb cooked small shrimp, peeled & deveined
  • 1 avocado, sliced
  • 1 c sour cream

Directions
  • Step #1 Cook rice according to package directions, adding curry powder to cooking water; chill in the fridge.
  • Step #2 Combine rice, shrimp, & remaining ingredients.

  • Step #4 New Zealand produces some of the best Sauvignon Blancs.
