Ingredients
1/4 c sliced fresh flat-leaf parsley
1/8 tsp ground red pepper
1/4 tsp ground cumin
1 whole garlic head
1 c plain fat-free yogurt
1/2 c (4 oz) block-style fat-free cream cheese
Cooking spray
1 small onion, peeled & halved
1 large red bell pepper
Directions
Step #1 Preheat broiler.
Step #2 Cut bell pepper in half lengthwise, & discard seeds & membranes.
Step #3 Place pepper halves, skin sides up, on a foil wrap-lined baking sheet; flatten with hand.
Step #4 Broil 15 mins or until blackened.
Step #5 Place in a zip-top plastic bag; seal.
Step #6 Let stand 10 mins.
Step #7 Remove peel & discard.
Step #8 Set roasted pepper aside.
Step #9 Reduce oven temperature to 400°.
Step #10 Place onion halves, cut sides down, on a baking sheet coated with cooking spray.
Step #11 Remove white papery skin from garlic head (do not peel or separate the cloves).
Step #12 Wrap in foil wrap.
Step #13 Place garlic on baking sheet with onion.
Step #14 Bake at 400° for 15 mins; turn over onion halves.
Step #15 Bake an extra 15 mins or until onions are soft & begin to brown.
Step #16 Place onion halves on a plate.
Step #17 Return garlic to oven, & bake an extra 15 mins.
Step #18 Cool 10 mins.
Step #19 Separate the cloves; squeeze to extract garlic pulp.
Step #20 Discard skins.
Step #21 Place roasted pepper, onion, & garlic pulp in a food processor/blender; process until fairly smooth.
Step #22 Add yogurt, cheese, cumin seed, & ground red pepper; process until smooth.
Step #23 Spoon dip into a bowl, & stir in the parsley.
Step #24 Cover up & chill in the fridge.
