Baked Spinach-parmesan Dip Recipe

Ingredients
  • 1 c reduced-fat or regular mayonnaise
  • 2 baguettes (8 oz. each), thinly sliced
  • 1/2 tsp paprika
  • 1 package (3 oz.) cream cheese
  • 1/8 tsp pepper
  • 1 clove garlic, pressed or minced
  • 1 package (10 oz.) frozen sliced spinach, thawed
  • 1 onion (6 oz.), peeled & minced
  • 1 c plus 2 tbsps grated parmesan cheese

Directions
  • Step #1 Squeeze spinach to remove liquid.
  • Step #2 With a mixer, cream cheese, 1 c parmesan cheese, mayonnaise, garlic, onion, beat spinach, & pepper until thoroughly mixd.
  • Step #3 Mound mixture in a 3- to 4-c baking dish.
  • Step #4 Sprinkle top evenly with 2 tbsps parmesan cheese & the paprika.
  • Step #5 Bake in a 350° oven until hot in center & lightly browned on top, 25 to 30 mins.
  • Step #6 Serve hot to spread on baguette slices.
