Spring Greens Pie Recipe

Ingredients
  • 1/2 c part-skim ricotta cheese
  • 1/2 tsp fennel seeds
  • 1/2 tsp salt
  • 10 c bagged prewashed baby spinach (about 3 [6-oz] packages)
  •  Cooking spray
  • 1/2 c coarsely sliced fresh parsley
  • 4 c sliced beet greens (about 4 oz)
  • 8 sheets frozen phyllo dough, thawed
  • 1 c thinly sliced green onions
  • 1/2 tsp black pepper
  • 1/2 c (2 oz) shredded part-skim mozzarella cheese
  • 1/4 c sliced fresh dill
  • 5 c trimmed arugula (about 9 oz)
  • 1/2 c sliced shallots (about 5)

Directions
  • Step #1 Preheat oven to 375°.
  • Step #2 Heat a large nonstick skillet over medium-high heat.
  • Step #3 Coat pan with cooking spray.
  • Step #4 Add onions & shallots; cook 4 mins or until golden.
  • Step #5 Remove onion mixture from pan; set aside.
  • Step #6 Add spinach to pan; cook 6 mins or until wilted, stirring every once in awhile.
  • Step #7 Place spinach in a colander.
  • Step #8 Add arugula & beet greens to pan; cook 3 mins or until wilted.
  • Step #9 Place arugula mixture on top of spinach in colander; drain, pressing until barely moist.
  • Step #10 Combine onion mixture, spinach mixture, & cheeses In a large-ish bowl.
  • Step #11 Stir in parsley, dill, fennel seeds, salt, & pepper.
  • Step #12 Place one sheet of phyllo dough on a large cutting board or work surface (cover remaining dough to keep from drying); lightly coat with cooking spray.
  • Step #13 Place sheet in a 10-inch deep-dish pie plate coated with cooking spray, carefully pressing into bottom & up sides of pan, letting ends of phyllo overlap the top of pan.
  • Step #14 Repeat procedure with remaining phyllo sheets, placing in a crisscross pattern.
  • Step #15 Spoon spinach mixture evenly over phyllo.
  • Step #16 Fold overlapping ends of phyllo toward center of pan.
  • Step #17 Coat ends with cooking spray, & carefully press to hold shape.
  • Step #18 Bake at 375° for 40 mins or until golden.
  • Step #19 Cool 15 mins on a wire rack; cut into wedges.
