Steamed Mussels With Lemon, Onion, And Wine (mijillones Al Limón) Recipe

Ingredients
  • 2 tbsps finely sliced shallots
  • 1/4 c fresh lemon juice
  • 2 tbsps finely sliced fresh parsley
  • 1/4 c dry white wine
  • 1 1/2 tsps sliced fresh thyme
  • 2 tsps olive oil
  • 1/8 tsp salt
  • 1/8 tsp freshly ground black pepper
  • 2 1/4 c vertically sliced onion (1 medium)
  • 1 3/4 lbs small mussels, scrubbed & debearded
  • 1 bay leaf
  • 1 garlic clove, minced

Directions
  • Step #1 Heat oil In a large-ish nonstick skillet over med-heat/flame.
  • Step #2 Add onion, garlic, shallots, thyme, & bay leaf; sauté 2 mins.
  • Step #3 Reduce heat to low; cover & cook 10 mins.
  • Step #4 Add wine; uncover & cook over medium-high heat 2 mins or until liquid almost evaporates.
  • Step #5 Add mussels, salt, juice, & pepper.
  • Step #6 Cover up & cook 3 mins or until the mussels open; discard any unopened shells & bay leaf.
  • Step #7 Serve with pan juices; sprinkle with parsley.
