Blue Cheese Terrine With Tomato-basil Vinaigrette Recipe

Ingredients
  • 2 yellow bell peppers, cut in half
  •  Tomato-Basil Vinaigrette
  • 6 oz blue cheese, crumbled
  • 2 (8-oz) packages cream cheese, softened
  • 2 red bell peppers, cut in half
  •  Mixed salad greens

Directions
  • Step #1 Place bell pepper halves, cut sides down, on an aluminum foil wrap-lined baking sheet.
  • Step #2 Broil 5 inches from heat (with electric oven door partially open) 8 to 10 mins or until bell peppers look blistered.
  • Step #3 Place bell peppers in a heavy-duty zip-top plastic bag; seal & let this stand 10 mins to loosen skins.
  • Step #4 Peel peppers; remove & discard seeds.
  • Step #5 Pat dry with paper towels.
  • Step #6 Beat cheeses at medium speed with an electric mixer until smooth.
  • Step #7 Spread half of cheese mixture in a plastic wrap-lined 8- x 4-inch loafpan.
  • Step #8 Top with 4 pepper halves.
  • Step #9 Spread remaining cheese mixture over peppers; top this with remaining pepper halves.
  • Step #10 Chill 8 hrs.
  • Step #11 Unmold onto a serving dish, & drizzle with Tomato-Basil Vinaigrette.
  • Step #12 Serve on mixed greens.
