Ajlouk Qura'a (mashed-zucchini Salad) Recipe

Ingredients
  • 1 garlic clove, crushed
  • 1/2 tsp harissa
  • 1/2 tsp caraway seeds
  • 1/2 tsp salt
  • 1 tbsp extra-virgin olive oil
  • 1/4 c (2 oz) crumbled feta cheese
  • 1/2 tsp ground coriander
  • 1 1/4 lbs zucchini, cut into 1-inch-thick slices
  • 1 tbsp fresh lemon juice

Directions
  • Step #1 Place zucchini In a large-ish saucepan; cover with water to 1 inch above zucchini.
  • Step #2 Bring to a boil, & cook 20 mins or until zucchini is very tender.
  • Step #3 Drain.
  • Step #4 While zucchini is still in colander, coarsely mash zucchini with a fork; drain.
  • Step #5 Combine juice & next 6 ingredients (juice through garlic) in a bowl; stir with a whisk.
  • Step #6 Add zucchini; toss well.
  • Step #7 Sprinkle top with cheese.
  • Step #8 Serve with pita bread.
