Ruth's Pesto Recipe

Ingredients
  • 1/2 c pine nuts
  • 1 c freshly grated Parmesan cheese
  • 1 1/2 c olive oil
  • 3 cloves garlic
  • 1/4 tsp pepper
  • 4 c loosely packed fresh basil leaves

Directions
  • Step #1 Process all ingredients in an electric mixer or food processor/blender until mixture is smooth, stopping once to scrape down sides.
  • Step #2 Note: Pesto may be frozen in 2-tbsp portions in sections of ice cube trays.
  • Step #3 Allow 1 cube per 2 oz pasta.
