Curried Deviled Eggs On Whole-wheat Crackers Recipe

Ingredients
  • 1/8 tsp ground red pepper
  • 1/4 tsp ground cumin
  • 2 tsps fresh lime juice
  • 1 1/2 tbsps 2% small-curd low-fat cottage cheese
  • 3 tbsps fat-free mayonnaise
  • 6 hard-cooked large eggs
  • 1/4 tsp paprika
  • 12 reduced-fat whole-wheat crackers (such as Keebler reduced-fat wheat Toasteds)
  • 1 tbsp freeze-dried chives
  • 1 1/2 tsps curry powder

Directions
  • Step #1 Peel & slice eggs in half lengthwise.
  • Step #2 Mash yolks; stir in the chives & next 6 ingredients (chives through red pepper).
  • Step #3 Spoon about 1 tbsp yolk mixture into each egg white half.
  • Step #4 Cover up & chill 1 hr.
  • Step #5 Sprinkle top with paprika; serve this with crackers.
