Shrimp-stuffed Eggs Recipe

Ingredients
  • 3/4 lb shrimp, cooked, peeled, & sliced
  • 1/2 c instant potato flakes
  • 1/4 tsp salt
  • 1 tbsp Dijon mustard
  • 1/4 tsp pepper
  •  Garnish: fresh dill sprigs
  • 2 tbsps prepared horseradish
  • 3/4 c light mayonnaise
  • 6 green onion, minced
  • 1 dozen hard-cooked eggs, peeled

Directions
  • Step #1 Cut eggs in half lengthwise.
  • Step #2 Remove yolks.
  • Step #3 Process yolks, & next 4 ingredients in a food processor/blender until smooth, mayonnaise, stopping to scrape down sides.
  • Step #4 Stir cooked & sliced shrimp, horseradish, & minced green onions into egg mixture.
  • Step #5 Spoon filling into egg whites.
  • Step #6 Cover up & chill up to 8 hrs.
  • Step #7 Garnish, if desired.
