Roll-ups With Bacon, Peas, And New Potatoes Recipe

Ingredients
  • 1 lb new potatoes, scrubbed & cut into ½-inch pieces
  • 1 tbsp butter
  • 1 tsp fresh thyme leaves or 1/3 tsp dried
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1 c sour cream
  • 8 white corn tortillas
  •  4 to 6 slices precooked bacon, crumbled
  • 1 c frozen peas, defrosted in 2 c water & drained
  •  2 scallions, thinly sliced

Directions
  • Step #1 Preheat oven to 300°F.
  • Step #2 Place the potatoes in a medium saucepan on high heat with enough water to cover them.
  • Step #3 Cook 15 to 18 mins, until soft.
  • Step #4 Drain in a colander; set aside.
  • Step #5 Meanwhile, wrap all the tortillas tightly together in foil wrap & place this in oven for 5 mins.
  • Step #6 Place the saucepan back on low heat & add the butter & bacon.
  • Step #7 Stir until warm & sizzling, about 2 mins; remove this from heat.
  • Step #8 Add the potatoes, half the scallions, peas, thyme, & half the sour cream.
  • Step #9 Stir & mash with a potato masher or a wooden spoon.
  • Step #10 Spice up with the salt & pepper to taste.
  • Step #11 Remove the tortillas from oven & place 2 on each plate.
  • Step #12 Put 1/3 c of the potato mixture on each tortilla & roll them as shown above.
  • Step #13 Top each with a spoonful of the remaining sour cream & sprinkle with the remaining scallions & a few grinds of black pepper to taste.
