Roasted Red Pepper Bruschetta Recipe

Ingredients
  • 1 baguette, cut into 28 slices
  • 1/2 c crumbled garlic & herb-flavored feta cheese
  •  Dash of sugar
  •  Salt & pepper
  • 1/4 c olive oil
  • 1/2 c finely sliced plum tomato
  • 1 (12-oz) jar roasted red peppers, drained well & finely sliced
  • 1/2 tsp freshly ground pepper
  • 1/4 c finely sliced purple onion
  • 1/2 tsp salt
  • 2 tbsps balsamic vinegar
  • 2 tbsps olive oil

Directions
  • Step #1 Combine first 3 ingredients in a bowl.
  • Step #2 Combine vinegar, 2 tbsps olive oil, pepper, salt, & sugar; pour over pepper mixture.
  • Step #3 Toss.
  • Step #4 Cover up & chill until ready to serve.
  • Step #5 Arrange baguette slices on a large ungreased baking sheet.
  • Step #6 Brush or drizzle slices with 1/4 c oil.
  • Step #7 Sprinkle top with salt & pepper.
  • Step #8 Bake at 400° for 4 mins or until barely toasted.
  • Step #9 Spoon about 1 tbsp pepper mixture onto each toast; top each with crumbled feta.
  • Step #10 Broil 5 1/2 " from heat 3 mins or until bubbly & barely browned.
  • Step #11 Serve warm.
