Shanghai Spring Rolls With Sweet Chili Sauce Recipe

Ingredients
  • 2 large eggs, lightly beaten
  •  Lettuce leaves (optional)
  • 1 (8-oz) can bamboo shoots, drained & minced
  •  Vegetable oil
  •  Sweet Chili Sauce
  • 1/8 tsp pepper
  • 1 (12-oz) package spring roll wrappers
  • 3 garlic cloves, minced
  • 1 (8-oz) can water chestnuts, drained & minced
  • 2 green onions, sliced
  • 1/2 lb unpeeled fresh shrimp
  • 1/8 tsp salt
  • 1/2 lb ground pork
  • 1 tbsp soy sauce
  • 2 tbsps minced fresh ginger

Directions
  • Step #1 Peel shrimp, & devein, if desired; finely chop.
  • Step #2 Stir together shrimp, 1 egg, pork, & next 8 ingredients.
  • Step #3 Spoon 1 tbsp mixture in center of each spring roll wrapper.
  • Step #4 Fold top corner of each wrapper over filling, tucking tip of corner under filling, & fold left & right corners over filling.
  • Step #5 Lightly brush remaining corner with remaining egg; tightly roll filled end toward remaining corner, & carefully press to seal.
  • Step #6 Pour vegetable oil to a depth of 2 inches into a medium saucepan, & heat to 350°.
  • Step #7 Fry spring rolls, a few at a time, 6 mins or until golden.
  • Step #8 Drain on paper towels.
  • Step #9 Serve spring rolls with Sweet Chili Sauce & over lettuce leaves, if desired.
