Ingredients
1 tsp salt
Olive oil
2 c all-purpose flour
1 tsp freshly ground pepper
Cocktail sauce
Directions
Step #1 Cut the bodies of larger squid into 1/2-inch rings.
Step #2 Smaller squid should be fried whole.
Step #3 Make sure the squid have been rinsed & patted as dry as possible.
Step #4 Preheat the oven to 200°.
Step #5 Place a wire rack on a baking sheet & set it in the oven.
Step #6 Pour oil to a depth of 3 inches in a stockpot or Dutch oven, place it over medium-high heat, & heat it to 365°.
Step #7 Salt & pepper the squid.
Step #8 Place the flour in a shallow bowl.
Step #9 When the oil reaches 365°, drop several pieces of squid into flour & toss to coat fully.
Step #10 Shake off excess flour, then fry in the hot oil until lightly browned, about 3 mins.
Step #11 Using a wire-mesh strainer, transfer the squid to the wire rack.
Step #12 Continue frying, always maintaining the temperature & not crowding the pot.
Step #13 Serve as soon as possible, with cocktail sauce for dipping, if desired.
