Calamari Recipe

Ingredients
  • 1 tsp salt
  •  Olive oil
  • 2 c all-purpose flour
  • 1 tsp freshly ground pepper
  •  Cocktail sauce

Directions
  • Step #1 Cut the bodies of larger squid into 1/2-inch rings.
  • Step #2 Smaller squid should be fried whole.
  • Step #3 Make sure the squid have been rinsed & patted as dry as possible.
  • Step #4 Preheat the oven to 200°.
  • Step #5 Place a wire rack on a baking sheet & set it in the oven.
  • Step #6 Pour oil to a depth of 3 inches in a stockpot or Dutch oven, place it over medium-high heat, & heat it to 365°.
  • Step #7 Salt & pepper the squid.
  • Step #8 Place the flour in a shallow bowl.
  • Step #9 When the oil reaches 365°, drop several pieces of squid into flour & toss to coat fully.
  • Step #10 Shake off excess flour, then fry in the hot oil until lightly browned, about 3 mins.
  • Step #11 Using a wire-mesh strainer, transfer the squid to the wire rack.
  • Step #12 Continue frying, always maintaining the temperature & not crowding the pot.
  • Step #13 Serve as soon as possible, with cocktail sauce for dipping, if desired.
