Shrimp Martinis With Napa Cabbage Slaw Recipe

Ingredients
  • 2 large eggs, lightly beaten
  •  Garnish: lime wedges
  • 4 c vegetable oil
  • 1 c sweetened flaked coconut, toasted
  • 1 c soft breadcrumbs
  • 24 unpeeled, large fresh shrimp (about 1 1/2 lbs)
  •  Napa Cabbage Slaw

Directions
  • Step #1 Peel shrimp, leaving tails on; devein, if desired.
  • Step #2 Dip shrimp in egg.
  • Step #3 Stir together breadcrumbs & coconut; dredge shrimp in mixture.
  • Step #4 Pour oil into a Dutch oven; heat to 375°.
  • Step #5 Fry shrimp, in batches, over medium-high heat 2 mins or until golden.
  • Step #6 Drain on paper towels.
  • Step #7 Spoon Napa Cabbage Slaw evenly into 8 martini glasses.
  • Step #8 Top each with 3 fried shrimp.
  • Step #9 Garnish, if desired.
