Black-bean Quesadillas With Goat Cheese Recipe

Ingredients
  • 1 (19-oz) can black beans, undrained
  • 8 (8-inch) flour tortillas
  • 2 tsps olive oil, divided
  • 1 (4-oz) package goat cheese, crumbled
  • 1/3 c minced fresh cilantro
  • 1/2 c salsa
  • 1 c sliced onion
  • 1/2 c salsa
  • 2 garlic cloves, minced
  • 1/4 tsp ground cumin
  • 1/2 c fat-free sour cream

Directions
  • Step #1 Heat 1 tsp olive oil In a large-ish nonstick skillet over medium-high heat.
  • Step #2 Add the onion & garlic, & saute for 3 mins.
  • Step #3 Stir in 1/2 c salsa, & beans, cumin, & bring to a boil.
  • Step #4 Reduce heat, & let simmer for 5 mins or until thick.
  • Step #5 Mash the bean mixture slightly with a potato masher.
  • Step #6 Remove from heat; stir in the the cilantro & goat cheese.
  • Step #7 Spread the bean mixture evenly over 4 tortillas; top each with 1 tortilla, pressing carefully.
  • Step #8 Heat 1/4 tsp olive oil in pan over medium-high heat.
  • Step #9 Add 1 quesadilla, & cook for 2 mins on each side.
  • Step #10 Repeat the procedure with the remaining olive oil & quesadillas.
  • Step #11 Cut each quesadilla into 6 wedges.
  • Step #12 Serve with fat-free sour cream & 1/2 c salsa.
