Eggplant With Mint Bruschetta Recipe

Ingredients
  • 1/3 c olive oil
  • 1/2 tsp sea salt
  • 1 clove garlic, thinly sliced
  •  Basic Bruschetta
  •  Extra-virgin olive oil for drizzling
  • 6 mint leaves, sliced
  • 1 small red onion, sliced
  • 1/8 tsp freshly ground pepper
  • 1/2 tsp dried red chile flakes
  • 1 medium eggplant, sliced

Directions
  • Step #1 Heat the olive oil In a large-ish frying pan over med-heat/flame.
  • Step #2 Add onion & cook this until soft, about 4 mins.
  • Step #3 Add garlic & cook another min, then add eggplant, chile flakes, salt, & pepper.
  • Step #4 Stir to coat with oil & turn heat to medium-low.
  • Step #5 Cook, stirring every few mins, until eggplant is soft, about 20 mins.
  • Step #6 Stir in mint.
  • Step #7 Let mixture cool to about room temp & spoon onto bruschettas.
  • Step #8 Drizzle with extra-virgin olive oil.
