Southwestern Rollups Recipe

Ingredients
  • 3 (6-oz) packages put in the fridged Southwestern-flavored chicken breast strips, sliced
  • 1 (1-oz) envelope fajita seasoning mix
  • 1 (15-oz) can black beans, rinsed & drained
  • 1/2 c chicken broth or water
  • 1 (10-oz) package frozen sliced spinach, thawed
  • 1 (11-oz) can yellow corn with red & green bell peppers, drained
  • 2 c (8 oz) shredded Monterey Jack cheese with peppers
  •  Salsa
  • 6 (10-inch) flour tortillas

Directions
  • Step #1 Combine spinach & fajita seasoning In a large-ish nonstick skillet; add broth.
  • Step #2 Cook over med-heat/flame, stirring often, 5 mins.
  • Step #3 Stir in chicken & next 3 ingredients; simmer until cheese melts.
  • Step #4 Spread 1 c chicken mixture on 1 side of each tortilla, leaving a 1/2-inch border around edges.
  • Step #5 Roll up tortillas tightly, & wrap in plastic wrap.
  • Step #6 Chill 30 mins.
  • Step #7 Unwrap rollups, & cut into slices.
  • Step #8 Serve with salsa.
  • Step #9 Note: For testing purposes only, we used put in the fridged Louis Rich Carving Board Southwestern-flavored Chicken Breast Strips.
