Roasted Beets With Sautéed Greens Recipe

Ingredients
  • 2 1/2 tbsps olive oil, divided
  • 1 3/4 tsps freshly ground black pepper, divided
  • 3/4 c toasted walnuts, coarsely sliced
  •  Balsamic Vinaigrette
  • 2 garlic cloves, minced
  • 4 lbs fresh beets with leaves (about 6 medium)
  • 2 oz goat cheese, crumbled
  • 1 3/4 tsps kosher salt, divided

Directions
  • Step #1 Remove stems & leaves from beets, discarding stems.
  • Step #2 Coarsely chop leaves; set aside.
  • Step #3 Place each beet on a piece of aluminum foil wrap.
  • Step #4 Drizzle each evenly with 1 tsp olive oil, 1/4 tsp salt, & 1/4 tsp pepper.
  • Step #5 Wrap beets tightly in foil wrap.
  • Step #6 Bake at 375° for 1 1/2 hrs or until tender.
  • Step #7 Cool slightly; carefully rub beets to remove skins.
  • Step #8 Cut beets in half lengthwise, & thinly slice into crescents.
  • Step #9 Meanwhile, heat remaining 1 1/2 tsps olive oil In a large-ish nonstick skillet over medium-high heat.
  • Step #10 Add garlic, & sauté 1 min.
  • Step #11 Add greens & remaining 1/4 tsp each of salt & pepper; sauté 2 to 3 mins or until wilted & tender.
  • Step #12 Toss cooled beets with greens & vinaigrette.
  • Step #13 Cover up & chill several hrs or until ready to serve.
  • Step #14 Sprinkle top with walnuts & goat cheese before serving.
