Stuffed Jumbo Shrimp Recipe

Ingredients
  • 8 jumbo fresh shrimp
  •  Garnish: lemon wedges
  • 1/2 to 2/3 c fine dry breadcrumbs
  • 1/4 c Butter Sauce
  • 2 Uncle Frank's Crab Cakes, uncooked

Directions
  • Step #1 Peel shrimp, leaving tails on; devein shrimp, if desired.
  • Step #2 Butterfly shrimp by making a deep slit down the back of each from the large end to the tail, cutting to, but not through, the inside curve of shrimp.
  • Step #3 Divide each crab cake evenly into 4 portions.
  • Step #4 Shape 1 portion evenly around each shrimp, forming a ball (leave tail exposed).
  • Step #5 Repeat procedure with remaining crab cake portions & shrimp.
  • Step #6 Divide shrimp evenly between 2 large ramekins.
  • Step #7 Sprinkle top evenly with breadcrumbs; spoon Butter Sauce over shrimp.
  • Step #8 Bake at 400° for 15 mins or until golden.
  • Step #9 Garnish, if desired.
