Blue Cheese Thumbprints Recipe

Ingredients
  • 1 1/3 c all-purpose flour
  • 1/4 tsp ground red pepper
  • 1/2 c butter, softened
  • 1/3 c cherry preserves
  • 2 (4-oz) packages crumbled blue cheese
  • 3 tbsps poppy seeds

Directions
  • Step #1 Beat blue cheese & butter at medium speed with an electric mixer until fluffy.
  • Step #2 Add flour, & red pepper, poppy seeds, beating just until mixd.
  • Step #3 Roll dough into 3/4-inch round balls; cover & chill 2 hrs.
  • Step #4 Arrange balls on ungreased baking sheets, & press thumb into each ball of dough, leaving an indentation.
  • Step #5 Bake at 350° for 15 mins or until golden.
  • Step #6 Transfer to wire racks to cool completely.
  • Step #7 Place about 1/4 tsp preserves in each indentation.
  • Step #8 Blue Cheese Crisps: Combine ingredients for dough as directed.
  • Step #9 Shape dough into 2 (9-inch-long) logs.
  • Step #10 Wrap each log in plastic wrap, & chill 2 hrs.
  • Step #11 Cut each log into 1/4-inch-thick slices, & place on ungreased baking sheets.
  • Step #12 Bake at 350° for 10 to 12 mins or until golden brown.
  • Step #13 Transfer to wire racks to cool completely.
  • Step #14 Omit cherry preserves.
  • Step #15 Store crisps in an airtight container up to 1 week.
