Oysters With Aioli Recipe

Ingredients
  • 1/3 c all-purpose flour
  • 1 1/2 tbsps sliced almonds
  • 2 tsps lemon juice
  • 1/2 tsp salt
  • 1 1/2 tsps hot smoked Spanish paprika
  • 2 tsps minced garlic
  • 4 tbsps extra-virgin olive oil
  • 2 jars (each 10 oz., or 30 total) shucked oysters, Kumamotos or small Pacifics, drained & patted dry
  • 1/3 c mayonnaise

Directions
  • Step #1 Stir almonds in a 6- to 8-inch frying pan over med-heat/flame until golden, 5 to 6 mins.
  • Step #2 Pour nuts into a food processor/blender or mixer.
  • Step #3 When slightly cooled, whirl to a fine powder.
  • Step #4 In a bowl, garlic, lemon juice, mix nuts, mayonnaise, & 1 tbsp olive oil; mix well.
  • Step #5 In a plastic food bag, mix flour, paprika, & salt.
  • Step #6 Drop in oysters, a few at a time, & shake to coat.
  • Step #7 Lift from bag, shaking off excess flour mixture.
  • Step #8 Lay oysters slightly apart on a sheet of waxed paper.
  • Step #9 Discard extra flour.
  • Step #10 Place a nonstick 10- to 12-inch frying pan over high heat.
  • Step #11 When hot, add 1 1/2 tbsps oil & swirl to coat pan.
  • Step #12 Add half of the coated oysters & brown well on each side, turning once, about 2 mins total.
  • Step #13 Drain on towels & keep warm.
  • Step #14 Add remaining oil to pan & brown remaining oysters.
  • Step #15 Serve the oysters with the almond aioli sauce.
