Roasted New Potatoes Filled With Corn And Shrimp Recipe

Ingredients
  • 1 tbsp olive oil
  • 24 small shrimp, cooked & peeled
  •  Cooking spray
  • 12 small red potatoes (about 1 1/2 lbs)
  •  Fresh tarragon leaves
  • 1/4 tsp pepper
  • 3 tbsps minced green onions
  • 2 tbsps cider vinegar
  • 1/4 tsp salt
  • 1 tsp sliced fresh or 1/4 tsp dried tarragon
  • 1 1/2 c frozen whole-kernel corn, thawed & drained

Directions
  • Step #1 Cut each potato in half crosswise; scoop out pulp, leaving a 1/4-inch-thick shell; reserve pulp for another use.
  • Step #2 Sprinkle top insides of potato shells with salt & pepper.
  • Step #3 Place potato shells upside down on a baking sheet coated with cooking spray.
  • Step #4 Bake at 450° for 15 mins; set aside.
  • Step #5 Heat oil in a medium skillet over medium-high heat.
  • Step #6 Add corn & green onions; sauté 2 mins.
  • Step #7 Add vinegar & sliced tarragon; cook 1 min.
  • Step #8 Divide corn mixture evenly among potato shells; top each with 1 shrimp.
  • Step #9 Garnish with tarragon leaves.
