Smoked Trout Mousse Recipe

Ingredients
  • 10 oz skinless, boneless smoked trout
  •  Fresh chives (optional)
  • 1/2 c sour cream substitute (such as Tofutti Sour Supreme)
  •  Cooking spray
  • 4 tsps sliced fresh dill
  • 2 tbsps fresh lemon juice
  • 1/2 tsp freshly ground black pepper
  • 1 c equal parts chicken broth & water
  • 1/4 c sliced fresh chives
  • 4 hard-cooked large eggs
  • 1 tbsp unflavored kosher gelatin

Directions
  • Step #1 Peel eggs.
  • Step #2 Slice each egg in half lengthwise; remove yolk.
  • Step #3 Reserve yolks for another use.
  • Step #4 Finely chop egg white.
  • Step #5 Set aside.
  • Step #6 Coat a (7 1/2 x 3-inch) loaf pan with cooking spray; line pan with plastic wrap.
  • Step #7 Set aside.
  • Step #8 Place broth in a 2-c glass measure; sprinkle gelatin over broth.
  • Step #9 Let stand 5 mins.
  • Step #10 Microwave broth mixture at high 30 seconds; stir until gelatin dissolves.
  • Step #11 Chill 15 mins or until mixture begins to thicken.
  • Step #12 Place trout in a food processor/blender; pulse 10 times or until finely sliced.
  • Step #13 Add broth mixture, lemon juice, & pepper; process until well mixd.
  • Step #14 Place trout mixture In a large-ish bowl; fold in sour cream substitute, 1/4 c chives, & dill.
  • Step #15 Spoon trout mixture into prepared pan; cover & chill overnight.
  • Step #16 Sprinkle top with egg white.
  • Step #17 Garnish with chives, if desired.
