Crab Cakes With Maui Sauce Recipe

Ingredients
  • 1/2 tsp coarsely ground pepper
  • 1 large egg, lightly beaten
  • 6 c loosely packed fresh spinach leaves
  • 2 tbsps minced fresh parsley
  • 2 tbsps minced shallots
  •  Garnish: shredded fresh spinach leaves
  • 1/4 c butter or margarine, divided
  • 1 tsp dark sesame oil
  • 1 tbsp minced fresh basil
  • 8 oz lump crabmeat, drained
  • 1 tbsp lemon juice
  •  Maui Sauce
  • 1/2 tsp salt
  • 2 tbsps Dijon mustard
  • 1/4 c soft breadcrumbs
  • 1 tsp minced fresh ginger

Directions
  • Step #1 Stir together first 12 ingredients, & shape into 12 patties.
  • Step #2 Melt 2 tbsps butter In a large-ish nonstick skillet over med-heat/flame.
  • Step #3 Add crab cakes, & cook 5 mins on each side or until golden brown.
  • Step #4 Remove from skillet, & keep warm.
  • Step #5 Add spinach to skillet, & sauté 1 to 2 mins or until wilted.
  • Step #6 Stir in remaining 2 tbsps butter.
  • Step #7 Spoon Maui Sauce onto 4 individual plates, & top evenly with crab cakes.
  • Step #8 Spoon spinach mixture around crab cakes.
  • Step #9 Garnish, if desired.
  • Step #10 Serve as soon as possible.
