Shrimp And Broccoli With Honey-walnut Caramel Sauce Recipe

Ingredients
  • 3 tbsps vegetable oil
  • 1 1/2 lbs large shrimp, shelled & deveined
  • 6 large garlic cloves, thinly sliced
  •  Freshly ground pepper
  • 1 lb broccoli florets, cut into 1-inch pieces
  • 1/2 c soy sauce
  • 1 c walnuts packed in honey, lightly drained, plus 1 tbsp of the honey from the jar
  • 4 Thai chiles or 1/2 habanero, thinly sliced
  • 1 1/2 tbsps fresh lemon juice

Directions
  • Step #1 In a medium saucepan, heat 1 tbsp of the oil.
  • Step #2 Add the walnuts & cook over moderate heat, stirring frequently, until browned, about 4 mins.
  • Step #3 Transfer the walnuts to a plate with a slotted spoon.
  • Step #4 Add another tbsp of the oil to the saucepan.
  • Step #5 Add the garlic, stirring every once in awhile, season this with pepper & cook over low heat/flame, until golden, about 4 mins.
  • Step #6 Add the 1 tbsp of the reserved honey; cook over moderate heat, stirring, until deeply browned, 1 min.
  • Step #7 Add the soy sauce & let simmer until slightly reduced, about 4 mins.
  • Step #8 Stir in the lemon juice & remove the garlic-caramel sauce from the heat.
  • Step #9 In a large skillet, heat the remaining 1 tbsp of oil.
  • Step #10 Add the broccoli, cover & cook over moderate heat for 3 mins.
  • Step #11 Uncover, stirring a few times, add the shrimp & chiles & cook, just until the shrimp are pink & curled.
  • Step #12 Stir in the garlic-caramel sauce, sprinkle the walnuts on top & serve.
  • Step #13 Wine Recommendation: An aromatic, fruity-ripe white will balance the heat & sweetness of this simple dish.
  • Step #14 Try a Viognier, or a California white mix, such as the 2002 Fairview from South Africa, such as the 2002 Conundrum.
