Cranberry Pumpkin Muffins Recipe

Ingredients
  • 2 1/4 c all-purpose flour
  • 2 eggs
  • 1 tsp pumpkin pie spice
  • 1 c canned pumpkin
  • 1/2 c vegetable oil
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 c fresh or frozen cranberries, sliced
  • 2 c sugar

Directions
  • Step #1 In a bowl, mix the first four ingredients.
  • Step #2 In a mixing bowl, beat the eggs & sugar; add the pumpkin & oil & mix well.
  • Step #3 Stir into the dry ingredients just until moistened.
  • Step #4 Fold in the cranberries.
  • Step #5 Fill foil-or paper-lined muffin c three-fourths full.
  • Step #6 Bake at 400F degrees F for 18-22 mins or until a toothpick comes out clean.
  • Step #7 Cool for 5 mins before removing from pans to wire racks.
