Fruit Wands With Vanilla-rum Syrup Recipe

Ingredients
  • 2 c pineapple chunks
  • 2 tbsps long, thin shreds of orange peel
  • 1 vanilla bean (about 7 in.) or 2 tsps vanilla
  • 1 c sugar
  • 2 star fruit (about 6 oz. total), rinsed
  • 1/4 c rum
  • 1 c strawberries, hulled & rinsed

Directions
  • Step #1 Put sugar in a 1 1/2- to 2-quart pan.
  • Step #2 Using a small, sharp knife, slit vanilla bean lengthwise.
  • Step #3 Scrape seeds from pod into sugar; add pod to sugar.
  • Step #4 Stir in rum, orange peel, & 2 c water.
  • Step #5 Stir often over high heat until mixture boils & is reduced to 1 3/4 c, about 12 mins.
  • Step #6 Remove vanilla pod (let dry & store airtight for other uses).
  • Step #7 Let syrup cool to about room temp, about 30 mins.
  • Step #8 Meanwhile, trim & discard ends from star fruit; cut fruit crosswise into 1/2-inch slices.
  • Step #9 Using a small, sharp knife, remove any seeds.
  • Step #10 Poke sharp end of 1 skewer through skin edge of each star fruit piece.
  • Step #11 Also poke 1 skewer through each pineapple chunk & strawberry.
  • Step #12 Put skewers, fruit ends down, in a deep bowl.
  • Step #13 Pour syrup over fruit.
  • Step #14 Provide napkins to catch drips as guests pick up wands to eat.
