Ingredients
1/4 tsp crushed red pepper
1/2 c sliced fresh basil
2 tsps vegetable oil
9 large green or red cabbage leaves
1 tbsp sugar
1/4 c sliced fresh mint
1/2 tsp salt
3 garlic cloves, minced
1/2 tsp dark sesame oil
1 1/2 tbsps fish sauce
1/3 c fresh lime juice (about 3 limes)
2 (14-oz) packages water-packed firm reduced-fat tofu, drained & crumbled
2 serrano chiles, thinly sliced
2 c thinly vertically sliced red onion
Directions
Step #1 Combine first 5 ingredients, stirring until sugar dissolves; set aside.
Step #2 Spread tofu in a single layer onto several layers of paper towels; cover with extra paper towels.
Step #3 Let stand 15 mins, pressing down every once in awhile.
Step #4 Heat oils In a large-ish nonstick skillet over medium-high heat.
Step #5 Add onion, garlic, & chiles; sauté 3 mins.
Step #6 Add tofu; cook 8 mins or until lightly browned, stirring every once in awhile.
Step #7 Stir in juice mixture; cook 1 min or until heated.
Step #8 Remove from heat; stir in the basil & mint.
Step #9 Spoon about 1/2 c tofu mixture into each cabbage leaf.
