Tofu Larb Recipe

Ingredients
  • 1/4 tsp crushed red pepper
  • 1/2 c sliced fresh basil
  • 2 tsps vegetable oil
  • 9 large green or red cabbage leaves
  • 1 tbsp sugar
  • 1/4 c sliced fresh mint
  • 1/2 tsp salt
  • 3 garlic cloves, minced
  • 1/2 tsp dark sesame oil
  • 1 1/2 tbsps fish sauce
  • 1/3 c fresh lime juice (about 3 limes)
  • 2 (14-oz) packages water-packed firm reduced-fat tofu, drained & crumbled
  • 2 serrano chiles, thinly sliced
  • 2 c thinly vertically sliced red onion

Directions
  • Step #1 Combine first 5 ingredients, stirring until sugar dissolves; set aside.
  • Step #2 Spread tofu in a single layer onto several layers of paper towels; cover with extra paper towels.
  • Step #3 Let stand 15 mins, pressing down every once in awhile.
  • Step #4 Heat oils In a large-ish nonstick skillet over medium-high heat.
  • Step #5 Add onion, garlic, & chiles; sauté 3 mins.
  • Step #6 Add tofu; cook 8 mins or until lightly browned, stirring every once in awhile.
  • Step #7 Stir in juice mixture; cook 1 min or until heated.
  • Step #8 Remove from heat; stir in the basil & mint.
  • Step #9 Spoon about 1/2 c tofu mixture into each cabbage leaf.
