Walnut Pizza With Arugula And Yellow Tomatoes Recipe

Ingredients
  • 1/4 tsp black pepper
  • 1 c sliced yellow tomato
  • 1 c shredded roasted chicken breast
  • 1 c trimmed arugula
  • 2 tbsps coarsely sliced walnuts
  • 1/8 tsp black pepper
  • 1 tsp white balsamic vinegar
  • 1/4 c sliced red onion
  • 1 tbsp fat-free milk
  • 1/2 c (2 oz) reduced-fat feta cheese
  • 1 tsp sliced fresh or 1/4 tsp dried oregano
  • 2 (7-inch) individual put in the fridged pizza crust dough (such as Mama Mary's)

Directions
  • Step #1 Bake pizza shells according to package directions, omitting fat.
  • Step #2 While pizza shells bake, heat a small skillet over medium-high heat.
  • Step #3 Add walnuts; cook 3 mins or until lightly browned, stirring constantly.
  • Step #4 Place walnuts, feta, milk, oregano, & 1/4 tsp pepper in a food processor/blender; pulse to mix.
  • Step #5 Combine arugula & remaining ingredients; toss to mix.
  • Step #6 Divide walnut mixture evenly among pizza shells; spread evenly.
  • Step #7 Divide arugula mixture evenly among shells.
