Parmesan Potato Bites Recipe

Ingredients
  • 1 1/2 tsps olive oil
  • 12 small round red potatoes (about 1 lb)
  • 1 tsp rubbed sage
  • 1/2 c (2 oz) grated fresh Parmesan cheese
  • 3/4 c minced onion
  • 3 garlic cloves, minced
  • 1/4 c uncooked, sliced turkey bacon (about 2 slices)
  • 1/8 tsp freshly ground pepper

Directions
  • Step #1 Cook potatoes in boiling water 15 mins or until tender; drain.
  • Step #2 Heat oil in a nonstick skillet over medium-high heat.
  • Step #3 Add onion, bacon, pepper, & garlic; sauté 5 mins or until tender.
  • Step #4 Preheat broiler.
  • Step #5 Cut potatoes in half; carefully scoop out pulp, leaving a 1/4-inch shell.
  • Step #6 Mash potato pulp with a fork; stir in the cheese & sage.
  • Step #7 Add to onion mixture, stirring well.
  • Step #8 Spoon about 1 tbsp potato mixture into each shell.
  • Step #9 Arrange stuffed potatoes on a baking sheet, & broil 3 to 4 inches from heat 3 mins or until lightly browned.
  • Step #10 Serve warm.
