Black-eyed Pea Hummus Recipe

Ingredients
  • 1 tsp ground cumin
  • 1/2 c fresh lemon juice (about 2 lemons)
  • 3 garlic cloves, peeled
  • 2 (15.8-oz) cans black-eyed peas, drained
  •  Fresh chives (optional)
  • 1/3 c tahini (sesame-seed paste)
  • 14 (6-inch) pitas, quartered
  • 1/2 tsp salt
  • 1/2 tsp paprika

Directions
  • Step #1 Drop garlic through chute of food processor/blender with processor on; process 3 seconds or until garlic is minced.
  • Step #2 Add lemon juice & next 5 ingredients (lemon juice through peas); process until smooth, scraping sides of bowl every once in awhile.
  • Step #3 Serve with pita wedges.
  • Step #4 Garnish with fresh chives, if desired.
