Crispy Ginger-and-garlic Asian Turkey Lettuce Wraps Recipe

Ingredients
  • 1 c sliced shiitake mushrooms
  •  Hoisin sauce (optional)
  • 1/4 c hoisin sauce
  • 1 (8-oz) can water chestnuts, drained & sliced
  • 1 (20-oz) package lean ground turkey
  • 1/2 c sliced green onions
  • 1 tbsp rice vinegar
  • 1/2 c water
  • 1 tbsp sesame oil
  • 1/3 c teriyaki sauce
  • 3 garlic cloves, minced
  • 1 head iceberg lettuce, separated into leaves
  • 2 tbsps minced fresh ginger
  • 1/2 c finely sliced carrots
  • 3 tbsps creamy peanut butter

Directions
  • Step #1 Cook carrots & 1/2 c water In a large-ish nonstick skillet over high heat, stirring every once in awhile, 3 to 5 mins or until carrots are softened & water is evaporated.
  • Step #2 Remove from skillet.
  • Step #3 Reduce heat to medium.
  • Step #4 Cook turkey in skillet about 5 mins, stirring until turkey crumbles & is no longer pink.
  • Step #5 Add carrots, mushrooms, & next 8 ingredients.
  • Step #6 Increase heat to medium-high, stirring constantly, & cook, 4 mins.
  • Step #7 Add green onions, & cook, stirring constantly, 1 min.
  • Step #8 Spoon mixture evenly onto lettuce leaves; roll up.
  • Step #9 Serve with hoisin sauce, if desired.
