Grilled Italian Vegetables With Pasta Recipe

Ingredients
  • 3/4 lb zucchini, quartered lengthwise & cut into 1-inch-thick slices
  •  Cooking spray
  • 1/2 c thinly sliced fresh basil
  • 1 red bell pepper, seeded & quartered
  • 1 tsp salt, divided
  • 4 plum tomatoes, halved
  • 1 (1 1/4-lb) eggplant, cut into 1/2-inch-thick slices
  • 4 c (3-inch) sliced green onions (about 2 bunches)
  • 6 c hot cooked penne (about 12 oz uncooked tube-shaped pasta)
  • 2 tbsps extra-virgin olive oil
  • 1 tbsp grated lemon rind
  • 1/4 c (1 oz) grated fresh Parmesan cheese

Directions
  • Step #1 Place eggplant in a colander; sprinkle with 3/4 tsp salt.
  • Step #2 Toss carefully to coat.
  • Step #3 Cover up & let this stand 30 mins.
  • Step #4 Rinse eggplant with cold water, & drain well.
  • Step #5 Prepare grill.
  • Step #6 Place eggplant, zucchini, & bell pepper on grill rack coated with cooking spray.
  • Step #7 Grill 10 mins, turning once.
  • Step #8 Add tomatoes & onions; cook 5 mins, turning often.
  • Step #9 Remove the vegetables from grill; cut all into 1-inch pieces except tomato.
  • Step #10 Cut tomato halves in half lengthwise.
  • Step #11 Combine 1/4 tsp salt, rind, oil, & basil In a large-ish bowl.
  • Step #12 Add vegetable mixture, pasta, & cheese; toss well.
