Chèvre-and-avocado Tureen Recipe

Ingredients
  •  Olive Salsa
  • 3/4 c crushed red corn chips
  • 1/2 (8-oz) package cream cheese, softened
  • 1 tbsp sliced fresh cilantro
  • 8 oz chévre cheese, softened
  • 2 tbsps lime juice
  • 3/4 c crushed blue corn chips
  • 5 avocados, peeled
  •  Additional red & blue chips
  • 1/2 tsp salt

Directions
  • Step #1 Line an 8-inch springform pan with wax paper.
  • Step #2 Combine avocado, lime juice, & salt; coarsely mash with a fork.
  • Step #3 Spread evenly in prepared pan.
  • Step #4 Stir together cheeses & cilantro until smooth; spread over avocado mixture.
  • Step #5 Sprinkle top with chips.
  • Step #6 Top evenly with Olive Salsa.
  • Step #7 Chill 3 hrs.
  • Step #8 Unmold & serve this with extra chips.
