Cheese Puffs Recipe

Ingredients
  •  Unsalted butter, melted
  • 4 oz feta cheese
  • 2 large eggs
  • 1/4 c cottage cheese
  • 1 (3-oz) package cream cheese, softened
  • 1 (16-oz) package frozen phyllo pastry, thawed

Directions
  • Step #1 Beat eggs at medium speed with an electric mixer 1 min; beat in cheeses.
  • Step #2 Unfold phyllo, & cover with a slightly damp towel to prevent pastry from drying out.
  • Step #3 Place 1 phyllo sheet on a flat surface covered with wax paper; cut lengthwise into 3 (12- x 6-inch) strips.
  • Step #4 Brush 1 long side of each strip with melted butter; fold strips in half lengthwise, & brush with butter.
  • Step #5 Place 1 tsp cheese mixture at base of each strip; fold right bottom corner over to form a triangle.
  • Step #6 Continue folding back & forth into a triangle, carefully pressing corners together.
  • Step #7 Place triangles, on ungreased baking sheets, seam side down, & brush with butter.
  • Step #8 Repeat procedure with remaining phyllo sheets, cheese mixture, & butter.
  • Step #9 Bake at 375° for 15 mins or until golden.
  • Step #10 Note: You may freeze unbaked pastries on baking sheets; remove to airtight containers, & freeze up to 2 weeks.
  • Step #11 Bake as directed without thawing.
