Spice-crusted Shrimp With Remoulade Sauce Recipe

Ingredients
  • 1/4 tsp salt
  •  Dash of ground red pepper
  • 1 1/2 tbsps fresh lime juice
  • 2 tsps ground cumin
  • 48 large shrimp, peeled & deveined (about 1 1/2 lbs)
  • 1 tsp ground coriander
  • 1/4 c low-fat mayonnaise
  •  Sauce:
  • 1/2 tsp garlic powder
  •  Cilantro sprigs (optional)
  • 1 tbsp olive oil, divided
  • 1/4 c plain fat-free yogurt
  • 1 tsp grated lime rind
  • 2 tsps paprika
  • 1/8 tsp black pepper
  •  Shrimp:
  • 1 tsp capers, sliced

Directions
  • Step #1 To prepare sauce, mix first 6 ingredients in a bowl; stir with a whisk.
  • Step #2 To prepare shrimp, salt, mix cumin, coriander, garlic powder, paprika, & black pepper in a medium bowl.
  • Step #3 Add shrimp; toss well.
  • Step #4 Heat 1 1/2 tsps oil In a large-ish nonstick skillet over medium-high heat; add half of shrimp.
  • Step #5 Cook 3 mins on each side or until done.
  • Step #6 Remove shrimp; keep warm.
  • Step #7 Repeat procedure with remaining oil & shrimp.
  • Step #8 Serve shrimp with sauce.
  • Step #9 Garnish with cilantro, if desired.
