Crustless Almond Cheesecake Recipe

Ingredients
  • TOPPING:
  • 1 (8 oz) package cream cheese, softened
  • 1/3 c sugar
  • 1 egg
  • 4 tsps sugar
  • 1/2 tsp vanilla extract
  • 1/2 c sour cream
  • 1/8 tsp almond extract
  • Assorted fresh fruit

Directions
  • Step #1 In a small mixing bowl, beat the cream cheese & sugar for 2 mins or until smooth.
  • Step #2 Add the egg & almond extract; beat on lowish speed just until mixd.
  • Step #3 Pour into a 7-in.
  • Step #4 pie plate coated with nonstick cooking spray.
  • Step #5 Bake at 350 degrees F for 25 mins.
  • Step #6 Remove to a wire rack; cool for 5 mins.
  • Step #7 Combine topping ingredients; spread over cream cheese filling.
  • Step #8 Bake 7-8 mins longer or until set.
  • Step #9 Cool on a wire rack for 10 mins.
  • Step #10 Carefully run a knife around edge of pan to loosen; put in the fridge for at least 1 hr before serving.
  • Step #11 Serve with assorted fruit if desired.
