White-bean And Prosciutto Bruschetta Recipe

Ingredients
  • 3/4 tsp sliced fresh thyme, or 1/4 tsp dried thyme
  • 2 oz thin-sliced prosciutto, fat removed, cut into thin strips
  • 2 c drained & rinsed canned cannellini beans (one 19-oz can)
  •  Bruschetta
  • 2 1/2 tbsps sliced fresh parsley
  • 1 1/4 tsps wine vinegar
  • 1/8 tsp fresh-ground black pepper
  • 1 tbsp olive oil
  • 1/4 tsp salt
  • 2 tbsps minced red onion

Directions
  • Step #1 Put the beans in a medium glass or stainless-steel bowl.
  • Step #2 Using a fork, mash the beans to a coarse puree.
  • Step #3 Stir in the vinegar, oil, pepper, thyme, salt, & 2 tbsps of the parsley.
  • Step #4 Put some of the prosciutto on each of the bruschetta & top this with the bean mixture.
  • Step #5 Sprinkle top the remaining 1/2 tbsp parsley & the red onion over the beans.
