Shrimp Sullivan's Island Recipe

Ingredients
  • 10 qt. water
  • 1 3/4 c cider vinegar
  • 2 lemons, cut in half
  • 3 (13.75-oz.) cans quartered artichoke hearts, drained
  • 3 medium-size sweet onions, thinly sliced
  • 1/4 c Worcestershire sauce
  • 5 lbs unpeeled, medium-size fresh shrimp
  • 2 c olive oil
  • 1 tsp salt
  • 1 (3.5-oz.) jar capers, undrained
  •  Garnish: sliced fresh parsley
  • 1/2 to 1 tsp. hot sauce

Directions
  • Step #1 Bring 10 qt.
  • Step #2 water to a boil in a 12-qt.
  • Step #3 stockpot over medium-high heat; squeeze lemon halves over water, & add squeezed halves to water in stockpot.
  • Step #4 Add shrimp, & cook 3 mins or just until shrimp turn pink.
  • Step #5 Drain & rinse with cold water to stop the cooking process.
  • Step #6 Peel shrimp; devein, if desired.
  • Step #7 Layer shrimp, onions, & artichoke hearts in 2 (13- x 9-inch) baking dishes.
  • Step #8 Stir together olive oil & next 5 ingredients; pour evenly over shrimp mixture.
  • Step #9 Cover up & chill at least 12 hrs or up to 48 hrs, stirring every once in awhile.
  • Step #10 Garnish, if desired, & serve this with a slotted spoon.
