Wild Mushroom Bruschetta Recipe

Ingredients
  • 2 tbsps finely sliced flat-leaf parsley
  • 3 garlic cloves, divided
  • 6 1/2 c coarsely sliced cremini mushrooms (about 1/2 lb)
  • 1 tsp extravirgin olive oil
  • 1/8 tsp freshly ground black pepper
  • 1/2 tsp salt
  • 2 1/2 c coarsely sliced chanterelle mushrooms (about 4 oz)
  • 12 (1/2-oz) slices country bread
  • 1/2 c (2 oz) shaved Parmigiano-Reggiano cheese
  •  Cooking spray
  • 3 c coarsely sliced oyster mushroom caps (about 4 oz)

Directions
  • Step #1 Mince 2 garlic cloves.
  • Step #2 Cut remaining clove in half; set aside.
  • Step #3 Place the mushrooms in a food processor/blender; pulse 10 times or until finely sliced.
  • Step #4 Place minced garlic, parsley, & oil In a large-ish nonstick skillet; cook 30 seconds over medium-high heat.
  • Step #5 Add mushrooms; cook 6 mins or until liquid evaporates & mushrooms are tender, stirring constantly.
  • Step #6 Remove from heat; stir in the salt & pepper.
  • Step #7 Cool slightly.
  • Step #8 Lightly coat both sides of bread with cooking spray.
  • Step #9 Heat a grill pan over medium-high heat; add half of bread.
  • Step #10 Cook 1 min on each side or until toasted.
  • Step #11 Rub 1 side of each bread slice with cut sides of garlic clove halves.
  • Step #12 Repeat procedure with remaining bread & garlic.
  • Step #13 Spoon about 2 tbsps mushroom mixture over each bread slice, & top this with about 2 tsps cheese.
